Lobster Linguine

Ingredients

1 cooked lobster – meat removed and chopped

Keep the lobster ‘jus’

1½ pkts linguine (depending on how many you are cooking for)

Oil

1 red chilli chopped

1 clove garlic chopped

50gm butter

½ cup white wine

Salt & pepper

½ lemon zest

1 tblspn fresh dill chopped

Lobster oil

Method

Bring saucepan of salted water to boil and cook pasta

Heat generous amount oil in pan

Add chilli and garlic

Add butter

Pour over white wine

Stir stir stir and let wine reduce

Add lobster meat to pan

Season with pepper

Pour in ‘jus’

Add cooked pasta straight from the boiling water

Stir stir stir

Season with salt and a bit more pepper and dill

Drizzle over a little Lobster oil and serve
