Large Spirals with Pumpkin & Rosemary

Ingredients

1 pkt San Remo Large Spirals

1 ½ cups grated butternut pumpkin

1 small brown onion, finely sliced

1 sprig of rosemary

2 garlic cloves, thinly sliced

2/3 cups of chicken stock

2tbs olive oil

2 tbs butter

½ cup pecorino, grated

¼ cup sour cream

Salt n pepper

Method

Place olive oil, butter, garlic, rosemary in a large pan and allow butter to melt.

Add onion cook until golden brown and softened.

Next add pumpkin and combine. Cook for a further 4mins.

Pour stock over pumpkin and bring to the boil.

Simmer for 10mins or until soft.

Add salt n pepper to taste.

In another pot filled with boiling water, cook pasta as per packet directions.

Remove pasta and mix into pumpkin.

Turn down heat to low and add pecorino and sour cream.

Mix and add salt n pepper to taste.

Serve and add extra cracked pepper.
