Gluten Free Battered Snook


1 bottle cold sparkling mineral water

2 cups of gluten free flour (tapioca, rice or cornflour)

Salt and pepper

Fish fillets



Pour enough mineral water into flour to make a silky paste

Season fish fillets with salt and pepper

Dip fillets into the batter and drape off excess

Pour oil into a pan

Drop fish fillets into oil and lightly fry

Cook for approximately 2 minutes
