Dolmades with Southern Blue Fin Tuna and Tzatziki

Ingredients

Tzatziki

750 gms of Greek yoghurt

4 cloves garlic crushed

2 Lebanese cucumbers, deseeded and grated

1 tbsp olive oil

Salt & pepper

Dolmades

Vine leaves washed (you can buy these in a jar)

Southern Blue Fin tuna slices cut into small squares

Method

Strain yoghurt overnight through a piece of gauze or chux wipe

Combine all ingredients gently

Dolmades

Spread each vine leaf with tzatziki

Lay a piece of tuna over the top

Roll the vine leaf up into a small parcel

Continue until all vine leaves are used
